I've spent all day trying to figure out what today's post would be. I have a bunch of drafts just waiting for me to post (like my 40 by 40 list...I swear one day I will get to updating those two new tabs I added to the blog a while ago!) But none of them seemed...right. I just wasn't feeling any of them. And then as I was sitting at work I decided I was in the mood for cookies. But not just any cookies - I wanted my grandma's no-bake cookies. So I figured I'd make them tonight after dinner (so much for my May fitness goals, huh?!) And them - boom!! - a light went off. Why not share this recipe for today's post? I mean - it's perfect. Who doesn't love a simple-to-make cookie that has been handed down generations?! I mean duh, hello Renee, you have your post. So here it is - my grandma's recipe for no-bake cookies. I'm sure you've seen similiar ones out there - but these are THE BEST!! These are probably my favorite cookies - tied with my sister's oatmeal chocolate chip cookies. They're quick. They're easy. And you probably have all ingredients on hand already. It doesn't get any more perfect than that.... Grandma's No-Bake Cookies Ingredients: 2 cups sugar 1 stick of butter 1/2 c milk (I've even used almond milk in the past and tonight I used coconut milk!) 3 cups quick cooking oats 6 tablespoons cocoa powder 1 cup of shredded coconut (optional - I don't put in mine because the hubs doesn't like coconut) 1/4 teaspoon vanilla extract In a large saucepan add together the sugar, butter, and milk. Bring to a boil until all the butter is melted. Remove from heat and stir in all other ingredients. Let mixture cool (I usually pop the whole saucepan in the fridge - I'm too impatient to let it cool on its own!)
Once cool, shape into balls on a wax paper lined cookie sheet. I like to use a small ice cream scoop to do this. Then DEVOUR!!! I halved the recipe tonight and it made about 13 cookies (probably could have gotten a few more out of the batch if I hadn't eaten some of it before it was totally cooled -oops!) Enjoy!!

I love these cookies...I also love making recipes that make me think of the person that gave me the recipe...I always think of Grandma when I make her saucy franks recipe..
