ONE - I got home Monday night and the hubs had flowers for me AGAIN! That's 2 bouquets of 'just because' flowers within like 2 weeks. I don't know what he's buttering me up for but I don't care...I'm lovin' it! TWO - We had crockpot stuffed pepper soup Tuesday night for dinner. And let me tell ya - I could eat this every.single.day. I think I may have mentioned it before in one of my other posts but I had to again because it's just THAT good....I mean look at all that healthy goodness. It's definitely my favorite soup EVER!!! Look for the recipe next week!! THREE - First off, I'd like to point out that I'm pretty sure I'm one of the only people left on this planet that doesn't have a smart phone...and I'm A-OK with that. So please - don't make fun of my super, awesome, sweet phone :) I have much love for it. Anywho, it just cracks me right up when the hubs uses hashtags. He doesn't 'do' technology - he doesn't even have a Facebook account! - but when he uses hashtags it just makes me giggle. I think it's so adorbs and totally makes my day. FOUR - Yet, another food blurb (do you see a trend here?! Clearly I'm a wee bit obsessed with food!) Roasting veggies is my favorite way to cook 'em. Last night we had roasted broccoli AND roasted sweet potatoes and let me tell ya - A-MAZING! Roasting gives foods such a better flavor - all you need is a little EVOO, salt, and pepper...pop 'em in the oven at 425 for about 25 minutes and BOOM - deliciousness! You can roast pretty much anything - broccoli, cauliflower, spaghetti squash, and sweet potatoes are a few of my favorite things though to roast. If you've never roasted any of your veggies...you must do it! It's legit the best!!! FIVE - I CANNOT wait for my long run tomorrow. It's been 2 weeks since I've been able to do my long run outdoors and I can't freakin' wait! Also, this coming week I'm getting back into the routine of getting a 6 mile run in on Wednesdays right after work. Now that it stays light until almost 8 I can fit that in even with working late!! YAY!!
