I don't know about ya'll but I love me a good cookie. Pretty much anything sweet makes me happy (with the exception of cheesecake!) But when we're eating clean cookies are off limits. So when I came across this recipe I was psyched!!! A cookie we can actually eat while clean eating - sign me up! (my apologies that I don't have an actual picture of the cookies - I haven't made them in a while but wanted to share the recipe with ya'll anyways. #bloggerfail)
Ingredients: 2 cups pureed sweet potato (about 2 sweet potatoes. Just 'bake' them in the microwave and scrape out the insides) 1 cup almond flour 1/2 cup pure maple syrup (you can halve this amount if you'd like, especially if you add extra chocolate chips) 1 & 1/2 tsp cinnamon 1/4 tsp nutmeg 3 T Enjoy Life chocolate chips (or more if you're anything like me!) Preheat oven to 350. Combine all ingredients, except chocolate chips, until smooth (use either a hand blender, food processor, or you can just stir with a spoon or spatula.) Dough will be quite sticky. Let cool slightly. Stir in chocolate chips. Drop cookies onto a lined and greased cookie sheet (the smaller the better.) These cookies don't spread so go ahead and get as many as you can on the cookie sheet. Bake for about 20-25 minutes. Let cool. Keep in mind these aren't your regular cookies. They are very soft and moist (gosh I hate that word!) Don't expect the texture of them to be like other cookies you've baked. And since there are no eggs in them you don't have to worry if they're cooked all the way through. When we're clean eating these totally satisfy a sweet tooth craving - a batch of these bad boys never last long in our house!! Happy (and healthy) Baking <3
