Monday mornings are never fun...but weekends at home being productive and getting stuff done is!! We were away last weekend and we'll be out of town again this weekend so this past weekend was all about catching up, getting things done, being as productive as possible, and organizing!! And I'd say we succeeded at that!! Weekends like this make me downright happy I gotta say. Little projects that always need to be done around the house really stress me out - I'm just weird like that. So I gotta have weekends like this to keep myself from going over the edge :-p Friday I spent running errands after work. Once I got home we fixed a quick dinner of sweet potato hash and eggs (click here for the recipe - surprisingly good and quick and easy...my kinda Friday night dinner!) The rest of the weekend was spent running errands, rearranging the house a bit, working on projects, working out, and spending some time in the kitchen. On Sunday I actually had some time to make some Paleo friendly food. For dinner I made Chicken Noodless Soup. I followed Erin's recipe from Love, Fun, & Football. I didn't add cauliflower because I didn't have any on hand. I also didn't have any sage so I added some thyme and basil and some other spices and probably put in more veggies than the recipe called for (I never measure anything!!) It came out REALLY good!! It was the perfect meal on a cold, blustery Sunday evening. Then later Matt made these! OMG - sooooo good!! They taste like the chocolate part of a MallowCup. It definitely satisfied our sweet tooth and we'll definitely be keeping these around (Matt stuck them in the freezer....YUM! YUM!) What did ya'll do this weekend?
